How much collagen is in the bone broth? It doesn’t congeal like mine does at home so has the collagen been skimmed off?
We don’t skim off the collagen when we cook our bone broth, but we do skim off the fat. The reason that our bone broth doesn’t congeal is that after we cook our bone broth, it goes through a flash-heating step before being packed into the carton. Because that step is done at such a high heat, the collagen and other proteins present in our bone broth go through a process known as denaturation. Simply put, it’s this process that relaxes the protein and keeps it from congealing, yet leaves the collagen behind.
What bone parts do you use and how long do you cook the broth?
We pride ourselves in wasting very little of the chickens that are bought or raised on regional farms, and in that we try to cook our bone broth the way you would at home – over low heat and for long hours to let the collagen and protein-rich parts break down to create a bone broth that is packed full of nutrients.
